  • 1 tablespoon ginger, grated

  • 1 teaspoon turmeric
  • 1 piece red bell pepper, sliced
  • 2 cups spinach Cook until wilted.

Cooking Steps

  • In a large pan, heat some oil over medium heat. Add the onion, garlic, and ginger, sautéing until fragrant.
  • Add the chicken and cook until browned.
  • Stir in the curry powder and turmeric, mixing well.
  • Pour in the coconut milk and bring to a simmer.
  • Add the bell pepper and spinach, cooking until the spinach is wilted.
  • Season with salt to taste.
  • Serve over cauliflower rice and garnish with fresh cilantro.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze after cooling completely.
