Ingredients
  

Wet Ingredients

  • 1/3 cup vegetable oil
  • 1/2 cup honey A healthier sweetener.
  • 1 teaspoon vanilla extract
  • 2 large eggs Room temperature is best.
  • 1 cup mashed bananas Use very ripe bananas.

Dry Ingredients

  • 1.75 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 cup hot water To activate baking soda.

Mix-Ins

  • 1/2 cup chopped walnuts Substitute with pecans or chocolate chips if desired.

Preparation

  • Preheat your oven to 325 degrees F (165 degrees C) and grease a 9×5-inch loaf pan.
  • In a large bowl, beat the vegetable oil and honey together until smooth.
  • Add the eggs and mix well before stirring in the mashed bananas and vanilla extract.
  • Gradually add the whole wheat flour and salt.
  • In a small bowl, mix the baking soda with hot water. Stir well and then add it to the batter.
  • Gently fold in the chopped walnuts.
  • Pour the batter into the prepared loaf pan and spread it evenly.

Baking

  • Bake for about 55 to 60 minutes, or until a toothpick inserted in the center comes out clean.
  • Let it cool on a wire rack for about half an hour before slicing.

Notes

Store any leftover bread in an airtight container at room temperature for up to 3 days. Wrap in plastic wrap for up to a week in the fridge or freeze for up to 3 months.
