Ingredients
  

Filling

  • 1 package frozen spinach, thawed and drained Squeeze out as much water as possible.
  • 1 cup ricotta cheese
  • 1 cup feta cheese, crumbled
  • 1 cup shredded mozzarella cheese
  • 3 pieces eggs
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon nutmeg
  • to taste salt and pepper

Crust

  • 1 package phyllo dough
  • to taste Olive oil for brushing Use to brush the phyllo layers.

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a skillet, sauté onion and garlic until soft.
  • In a bowl, mix the thawed spinach, ricotta, feta, mozzarella, eggs, sautéed onions and garlic, nutmeg, salt, and pepper.
  • Layer phyllo dough in a greased baking dish, brushing each sheet with olive oil.
  • Pour the spinach mixture into the phyllo crust.
  • Cover with more layers of phyllo, brushing with olive oil.

Baking

  • Bake for 30-40 minutes or until golden brown.
  • Let it cool slightly before slicing. Serve warm.

Notes

You can serve Spinach Pie warm or at room temperature. It pairs well with a salad or yogurt on the side. Store leftovers tightly wrapped in the fridge for up to 3 days or freeze for up to a month.
