Cookie Dough Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened At room temperature for best results.
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt

Filling

  • 1/2 cup fruit jam (e.g., raspberry or strawberry) You can substitute with different flavors like apricot or lemon curd.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter and powdered sugar until light and fluffy.
  • Mix in the vanilla extract.
  • Gradually add in the flour and salt, mixing until combined.
  • Roll out the dough on a floured surface to about 1/4 inch thick.
  • Cut out shapes using cookie cutters and place on a baking sheet.
  • Make an indentation in the center of each cookie and fill with jam.

Baking

  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow to cool before serving.

Notes

For serving, these cookies are great on their own or with tea or coffee. Sprinkle some powdered sugar on top for a pretty finish. Store them in an airtight container at room temperature for about a week.
