Preparation

  • Preheat your oven to 400°F (200°C).
  • Peel and slice the onions into wedges.
  • In a bowl, toss the onion wedges with olive oil, salt, and pepper. If desired, add balsamic vinegar and fresh herbs.
  • Spread the onions on a baking sheet in a single layer.

Cooking

  • Roast in the oven for about 25-30 minutes, or until they are golden and tender, stirring halfway through for even cooking.
  • Serve warm as a side dish or topping.

Notes

Make sure to cut the onions evenly for uniform cooking. You can add a sprinkle of brown sugar for sweetness or mix in other vegetables like bell peppers or carrots.
