Ingredients
  

Pasta and Proteins

  • 200 grams Risoni pasta Cook according to package instructions
  • 100 grams Ham Diced
  • 200 grams Prawns Cooked
  • 100 grams Haloumi Cubed

Fresh Vegetables

  • 1 medium Cucumber Chopped
  • 200 grams Cherry tomatoes Halved
  • 1 medium Red onion Diced
  • 20 grams Parsley Chopped

Dressing

  • 60 ml Olive oil
  • 30 ml Lemon juice

Seasoning

  • To taste Salt
  • To taste Pepper

Preparation

  • Cook the risoni pasta according to package instructions and drain.
  • In a large bowl, combine the cooked risoni with diced ham, cooked prawns, and cubed haloumi cheese.
  • Add chopped cucumber, halved cherry tomatoes, diced red onion, and chopped parsley.

Dressing

  • In a separate bowl, whisk together olive oil and lemon juice, then pour over the salad.
  • Season with salt and pepper to taste, and mix well to combine.

Serving

  • Serve immediately or store in the refrigerator for later enjoyment.

Notes

Make sure not to overcook the risoni pasta; it should be al dente for the best texture. Feel free to add more veggies or proteins based on your preferences! A sprinkle of feta cheese on top can add a lovely salty flavor.
