Main Ingredients

  • 2 cups mixed fruit (dried or candied) You can change based on your favorite flavors.
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter, softened Make sure it is softened.
  • 1/4 cup milk
  • 2 pieces eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract Variation: you can use almond extract for a twist.
  • 1/2 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C). Grease a cake pan.
  • In a large bowl, cream together the butter and sugar.
  • Beat in the eggs one at a time, then stir in the vanilla.
  • Mix in the flour, baking powder, and salt until just combined.
  • Fold in the mixed fruit.
  • Pour the batter into the prepared pan.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool before serving.

Notes

You can serve this cake warm or at room temperature. It's great on its own or with a scoop of ice cream or whipped cream. Store in an airtight container for up to three days or freeze for up to two months.
