  • 1 cup rice Use long grain or instant rice for a quicker meal.
  • 2 cloves garlic Minced for better flavor integration.
  • 1 medium onion Chopped.
  • 1 cup carrots Chopped, optional.
  • 2 cups broth Chicken or vegetable broth can be used.

Preparation

  • Gather all your ingredients.
  • In a large pot, heat some oil over medium heat.
  • Add chopped onion and garlic, sauté until translucent.
  • Add chicken thighs, browning them on all sides.
  • Once browned, add carrots, rice, and broth to the pot.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes.

Notes

Feel free to add extra vegetables like peas or spinach for added nutrition. If the bottom sticks a bit, just call it 'crispy' for a delightful twist.
