Base Ingredients

  • 1 cup rolled oats
  • 1 cup shredded coconut
  • 1/2 cup honey or maple syrup Choose honey for a non-vegan option.
  • 1/2 cup peanut butter or almond butter Can substitute with other nut butters.
  • 1/2 cup nuts (walnuts, almonds, etc.) Feel free to swap the nuts or add seeds for extra crunch.
  • 1/2 cup chocolate chips (optional) Adds sweetness; omit for a healthier version.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt

Preparation

  • Preheat your oven to 180°C (350°F) and line a baking dish with parchment paper.
  • In a large bowl, combine the rolled oats, shredded coconut, and nuts.
  • In a small saucepan over low heat, melt the peanut butter and honey (or maple syrup) together, stirring until smooth.
  • Remove from heat and stir in the vanilla extract and salt.
  • Pour the peanut butter mixture over the dry ingredients and mix well until combined. Add chocolate chips if desired.
  • Press the mixture firmly into the prepared baking dish.

Baking

  • Bake for 20-25 minutes, or until golden brown.
  • Allow to cool completely before slicing into squares.

Notes

Serve warm or at room temperature. Store in an airtight container at room temperature for up to a week. Freeze for up to three months; thaw at room temperature before enjoying.
