  • 3 pieces ripe bananas Use very ripe bananas for the best flavor.
  • 1/3 cup melted butter Can be substituted with applesauce or vegetable oil.
  • 1 cup sugar
  • 1 piece egg Adds moisture and richness.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda Essential for leavening.
  • 1 pinch salt
  • 1 1/2 cups all-purpose flour Do not overmix; stir until just combined for a lighter texture.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe bananas with a fork until smooth.
  • Stir in the melted butter.
  • Add the sugar, egg, and vanilla, and mix well.
  • Sprinkle the baking soda and salt over the mixture and mix in.
  • Finally, add the flour and mix until just incorporated.
  • Pour the batter into a buttered loaf pan.
  • Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the banana bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely.

Notes

Slice it up and serve with butter, cream cheese, or just plain. It’s also great with a cup of coffee or tea. For variations, try adding chopped walnuts, pecans, or chocolate chips.
