Ingredients
  

For the dough

  • 1 cup butter (softened) Make sure it's at room temperature for easy mixing.
  • 1/2 cup powdered sugar (plus more for rolling) Additional for coating after baking.
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour Can be substituted with gluten-free flour.
  • 1/2 teaspoon kosher salt
  • 3/4 cup finely chopped pecans or walnuts For a stronger nut flavor, lightly toast the nuts before adding.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, cream together the softened butter, powdered sugar, and vanilla extract until smooth.
  • Gradually add the all-purpose flour and kosher salt, mixing just until combined.
  • Stir in the finely chopped pecans or walnuts.
  • Scoop the dough into 1-inch balls and roll them smooth between your hands.
  • Place the cookie balls on a baking sheet.
  • Bake in the preheated oven for 10-12 minutes, until the cookies are set but not browned.
  • Remove from the oven and let them cool on the tray for a minute or two.
  • While still warm, roll each cookie in powdered sugar and place them on a cooling rack.
  • Once the cookies are completely cooled, roll them again in powdered sugar for extra sweetness.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze them in an airtight bag and roll in powdered sugar again after thawing.
