  • 250 g butter, softened Make sure your butter is softened well for a light and fluffy texture.
  • 1/2 cup icing sugar Essential for the sweet taste and texture.
  • 1 teaspoon vanilla extract
  • 1 cup plain flour
  • 1/2 cup cornflour You can substitute with all-purpose flour, but the texture may vary.
  • 1 pinch salt
  • to taste extra icing sugar for dusting
  • as desired filling (e.g., buttercream or raspberry jam) Experiment with different fillings for variety.

Preparation

  • Preheat the oven to 160°C (320°F). Line a baking tray with baking paper.
  • In a mixing bowl, cream together the butter, icing sugar, and vanilla until light and fluffy.
  • Sift in the plain flour, cornflour, and salt. Gently mix until combined.
  • Use a spoon to scoop small amounts of dough and roll into balls. Place on the tray and flatten slightly.

Baking

  • Bake for 12-15 minutes or until light golden. Allow to cool.
  • Spread a small amount of filling on the base of one cookie and sandwich it with another.
  • Dust with icing sugar before serving.

Notes

Store in an airtight container at room temperature. They last for several days, but will likely be gone quickly. You can freeze the unfilled cookies and thaw when ready to fill.
