  • 1 red onion, finely chopped
  • 1 medium lime, juiced Adjust lime juice to taste.

Preparation

  • In a large bowl, combine the diced mangoes, avocados, and red onion.
  • Squeeze the lime juice over the salad and toss gently to combine.
  • Add cilantro leaves and season with salt and pepper to taste.
  • Serve immediately or chill in the refrigerator for 30 minutes to let the flavors meld.

Notes

Store leftovers in an airtight container in the fridge and consume within a day for best quality. For extra crunch, consider adding diced cucumber or bell peppers. Black beans can be added for protein, or sprinkle some feta cheese for a creamy twist.
