Ingredients
  

Base Ingredients

  • 1 cup crushed biscuits You can use graham crackers for a richer flavor.
  • 1/2 cup melted butter

Filling Ingredients

  • 2 cups sweetened condensed milk Look for dairy-free alternatives if needed.
  • 1 cup lemon juice Fresh lemon juice can be used for extra flavor.
  • 1 cup coconut Optional.
  • 1 cup icing sugar

Garnish

  • to taste lemon zest For garnish on top.

Instructions
 

Preparation

  • In a large bowl, combine crushed biscuits and melted butter, and mix well.
  • Press the mixture firmly into a lined baking tray.

Filling

  • In another bowl, mix the sweetened condensed milk, lemon juice, coconut (if using), and icing sugar until smooth.
  • Pour this lemon mixture over the biscuit base and spread evenly.

Chill and Serve

  • Chill in the refrigerator for at least 2 hours, or until everything is set.
  • Cut into squares, serve chilled, and sprinkle some lemon zest on top for a lovely finish.

Notes

Store in the refrigerator, covered with plastic wrap or in an airtight container. It will stay fresh for about a week. Adjust the amount of lemon juice based on personal taste preference.
