  • 4 pieces Chicken thighs Juicy and perfect for baking or grilling
  • 1 cup Cauliflower rice Great substitute for regular rice
  • 2 pieces Zucchini Use for zoodles or stuffed zucchini
  • 1 cup Shredded cheese Such as mozzarella or cheddar

Vegetables

  • 1 cup Broccoli Roasted or steamed as a side
  • 1 cup Bell peppers For stuffed peppers or stir-fries
  • 1 cup Spinach Useful for egg muffins or sautéing

Condiments & Spices

  • 2 tbsp Olive oil For cooking or dressing
  • 2 cloves Garlic For added flavor
  • 1 cup Marinara sauce Ensure no sugar is added

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Prepare cauliflower rice by pulsing in a food processor until it resembles rice.
  • Chop broccoli and bell peppers into bite-sized pieces.
  • Blend garlic with olive oil.

Cooking

  • Toss broccoli and peppers in olive oil and garlic, and roast in the oven for 20 minutes.
  • In a skillet, cook ground beef until browned. Season to taste.
  • Bake chicken thighs for 25-30 minutes until juicy and fully cooked.
  • Prepare zoodles from zucchini.
  • Assemble taco bowls with ground beef, cauliflower rice, and toppings of your choice.

Serving

  • Serve the roasted veggies alongside the chicken and taco bowls.
  • Add cheese and sauces to taste.
