  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour Use gluten-free almond flour for a gluten-free version.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, mash the ripe avocado until it's smooth.
  • Add the coconut sugar, almond butter, and vanilla extract to the bowl and mix until everything is well combined.
  • In a separate bowl, mix the almond flour, baking soda, and salt together.
  • Gradually add the dry mixture to the wet ingredients and stir until just combined.
  • Fold in the dark chocolate chips for a sweet surprise.
  • Drop spoonfuls of dough onto a lined baking sheet, giving them some space.
  • Bake for 10-12 minutes, or until the edges are golden brown.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. For longer storage, freeze them with parchment paper between each cookie to separate.
