Ingredients
  

For the Zucchini Base

  • 1 large zucchini, cut into 1/2-inch rounds Slice evenly for consistent cooking.
  • 1 tablespoon olive oil For brushing on zucchini.

Toppings

  • 1/4 cup pizza sauce Use your favorite brand.
  • 1/2 cup chopped red onion
  • 1/2 cup chopped roasted red pepper
  • 1/2 cup chopped fresh mushrooms
  • 1/4 cup crumbled goat cheese Or substitute with feta or fresh mozzarella.
  • 2 ounces shredded mozzarella cheese
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning

Preparation

  • Preheat the Grill: Heat your grill to medium and lightly oil the grate to prevent sticking.
  • Prepare the Zucchini: Brush one side of each zucchini round with olive oil, then spread a spoonful of pizza sauce on the other side.
  • Add the Toppings: Distribute the chopped red onion, roasted red pepper, mushrooms, goat cheese, shredded mozzarella cheese, minced garlic, and Italian seasoning evenly over the zucchini rounds.

Grilling

  • Carefully place the zucchini pizzas on the grill and cook for about 10 minutes, or until the zucchini is tender and the cheese is melted.

Notes

For extra flavor, sprinkle some red pepper flakes or a few fresh basil leaves on top of the finished pizzas. You can experiment with other toppings like olives, spinach, or a drizzle of pesto for a different flavor profile. If you have leftovers, store them in an airtight container in the fridge for up to 2 days.
