Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar Adjust according to taste
  • 1 tablespoon baking powder Leavening agent
  • ½ teaspoon salt Enhances flavor

Wet Ingredients

  • 1 cup milk
  • cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Add-ins

  • 1 cup green cranberries Can use frozen; thaw and drain first
  • 1 cup shelled pistachios Can replace with walnuts or almonds

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a loaf pan.
  • In a bowl, mix the flour, sugar, baking powder, and salt.
  • In another bowl, whisk the milk, oil, eggs, and vanilla together.
  • Combine the wet and dry ingredients until just mixed.
  • Fold in the green cranberries and pistachios.
  • Pour the batter into the loaf pan and smooth the top.

Baking

  • Bake for 55-60 minutes, or until a toothpick comes out clean.
  • Let it cool before slicing.

Notes

Serve with butter or cream cheese. Store in an airtight container at room temperature for 3-4 days or freeze for longer storage.
