Ingredients
  

Dry Ingredients

  • 1 cup gluten-free all-purpose flour Make sure it's labeled gluten-free
  • 1/2 cup sugar
  • 1/2 cup powdered sugar
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup butter, softened At room temperature for easier mixing
  • 1 large egg
  • 1 tsp vanilla extract

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter, sugar, and powdered sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • In another bowl, whisk together the gluten-free flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Scoop the dough onto a prepared baking sheet, spacing the cookies apart.

Baking

  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

These cookies can be served with milk or coffee. Sprinkle some powdered sugar on top for a fun presentation. Store in an airtight container at room temperature for up to a week, or freeze for longer storage.
