  • 2 cups mixed dried fruits
  • 1 cup walnuts (chopped) Chopped walnuts provide a nice crunch.
  • 1 cup raisins
  • 1 cup sugar Granulated sugar is used for sweetness.
  • 1 cup butter Make sure it's softened to room temperature.
  • 4 pieces eggs Large eggs are preferred.
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder For leavening the cake.
  • 1 teaspoon vanilla extract For flavor.
  • 1/2 teaspoon salt Enhances flavor.
  • 1 teaspoon ground cinnamon Adds warmth and spice.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.

Mixing

  • In another bowl, combine the flour, baking powder, salt, and cinnamon. Gradually add this to the butter mixture, mixing until just combined.
  • Fold in the mixed dried fruits, walnuts, and raisins.

Baking

  • Pour the batter into the prepared cake pan and spread it evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

Store your fruit cake in an airtight container at room temperature or in the fridge for longer freshness. Make sure ingredients are at room temperature for better mixing. Adjust the fruit mix based on what you have on hand.
