  • 1 cup bell peppers, diced

  • 1 cup corn kernels (fresh or canned) If using canned corn, drain well.
  • 1/4 cup fresh parsley, chopped

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Freshly squeezed if possible.

Preparation

  • In a large bowl, combine the diced cucumber, halved cherry tomatoes, diced bell peppers, thinly sliced red onion, corn, and chopped parsley.
  • In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper to create your dressing.
  • Pour the dressing over the salad and toss everything together until it’s well mixed.
  • Serve immediately for the freshest flavor.

Notes

For the best flavor, use fresh vegetables. You can add any of your favorite veggies, like zucchini or radishes. For a twist, try adding a bit of feta cheese or olives. If you have leftovers, store them in an airtight container in the fridge, but the salad is best eaten fresh. Keep the dressing separate until you're ready to serve.
