Ingredients
  

For the batter

  • 1 cup self-raising flour
  • 1 tablespoon sugar
  • 1 cup milk
  • 1 large egg
  • to taste Butter (for cooking)

Preparation

  • In a bowl, mix the self-raising flour and sugar together.
  • In another bowl, whisk the milk and egg together.
  • Combine the wet and dry ingredients until just mixed (do not overmix).
  • Heat a non-stick pan over medium heat and add a little butter.
  • Pour spoonfuls of batter onto the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
  • Serve warm with toppings of your choice.

Notes

Pikelets are best served warm! They can be topped with fresh fruit, syrup, yogurt, or powdered sugar. For storage, keep leftovers in an airtight container in the fridge for up to 2 days or freeze with parchment paper separating each pikelet.
