  • 1/2 cup butter, softened Ensure butter is at room temperature for easy mixing.
  • 4 pieces eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt

Preparation

  • Preheat the oven to 325°F (165°C). Grease and flour a cake pan.
  • In a bowl, mix together the dried fruit and nuts.
  • In another bowl, cream the butter and sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the vanilla extract.
  • In a separate bowl, combine the flour, baking powder, cinnamon, and salt.
  • Gradually add the flour mixture to the butter mixture, stirring until smooth.
  • Fold in the fruit and nut mixture carefully.
  • Pour the batter into the prepared cake pan and spread it evenly.

Baking

  • Bake in the oven for about 50-60 minutes. Check for doneness with a toothpick.
  • Let the cake cool before serving.

Notes

Serve with ice cream, whipped cream, or a dusting of powdered sugar. Store in an airtight container at room temperature for up to a week, or refrigerate for up to two weeks. Feel free to adjust the fruits and nuts according to your preference, and add zest for a citrusy twist.
