  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup brewed coffee
  • 1/2 cup Baileys Irish Cream
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

Frosting Ingredients

  • 1/2 cup unsalted butter
  • 2 cups powdered sugar
  • 1/4 cup Baileys Irish Cream

Preparation

  • Preheat the oven to 350°F (175°C) and grease an 8-inch round cake pan.
  • In a bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, whisk together the brewed coffee, Baileys, vegetable oil, egg, and vanilla extract.
  • Combine the wet and dry ingredients, and mix until smooth.
  • Pour the batter into the prepared cake pan.

Baking

  • Bake for 25-30 minutes or until a toothpick comes out clean.
  • Let the cake cool completely.

Frosting

  • For the frosting, beat the unsalted butter until creamy.
  • Then add the powdered sugar and Baileys, mixing until smooth.
  • Frost the cooled cake, slice, and enjoy!

Notes

Serve this cake plain or with vanilla ice cream. Store any leftovers in an airtight container for up to 3 days at room temperature or up to a week in the refrigerator. Bring to room temperature before serving.
