  • 1 cup sugar
  • 1 cup milk Use whole milk for a richer flavor.
  • 1 cup self-raising flour You can substitute with all-purpose flour plus 1 ½ teaspoons of baking powder.
  • 1 cup coconut
  • 4 pieces eggs
  • 1 teaspoon vanilla extract Almond extract can be used as a variation.
  • 1 pinch salt

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C). Grease a pie dish.
  • In a mixing bowl, combine the sugar, milk, flour, coconut, eggs, vanilla extract, and salt. Whisk until well combined.
  • Pour the mixture into the prepared pie dish.

Baking

  • Bake for 50-60 minutes, or until the top is golden and a skewer inserted into the center comes out clean.
  • Allow to cool before serving.

Notes

Serve warm or cold with whipped cream or a scoop of ice cream. For extra flavor, sprinkle toasted coconut on top. Store covered in the refrigerator for up to 3-4 days, or freeze for up to 2 months after cooling completely. Make sure to whisk the ingredients well to avoid lumps.
