  • 2 pounds Potatoes Yukon Gold or Russets recommended.
  • 6 ounces Brie cheese Sliced.
  • 1/2 cup Cranberry sauce
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt To taste.
  • 1/2 teaspoon Pepper To taste.
  • 1 teaspoon Thyme Fresh or dried.

Preparation

  • Preheat the oven to 400°F (200°C).
  • Boil the potatoes until tender, then drain and let cool slightly.
  • Lightly smash the potatoes on a baking tray.
  • Drizzle with olive oil, then season with salt, pepper, and thyme.

Cooking

  • Roast in the oven until crispy and golden, about 20-25 minutes.
  • Remove from oven and top each potato with a slice of brie and a spoonful of cranberry sauce.
  • Return to the oven for a few more minutes until the brie is melted.
  • Serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, pop them back in the oven until heated through. For added flavor, consider adding crispy bacon or caramelized onions before serving.
