Ingredients
  

Main Ingredients

  • 2 cups mixed dried fruit Use your favorite dried fruits.
  • 1 cup water
  • 1 cup brown sugar
  • 1/2 cup butter Melted.
  • 1 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1 teaspoon mixed spice
  • 1/2 teaspoon salt
  • 2 eggs
  • 1/2 cup chopped nuts Optional.

Preparation

  • In a large pot, combine mixed dried fruit, water, brown sugar, and butter. Bring to a boil and then simmer for about 10 minutes. Remove from heat and let it cool.
  • Preheat the oven to 325°F (170°C). Grease and line a cake tin.
  • Stir in baking soda, flour, mixed spice, and salt into the cooled fruit mixture.
  • Beat in the eggs one at a time until well incorporated. If you like, fold in the chopped nuts.
  • Pour the mixture into the prepared cake tin.

Baking

  • Bake for 1-1.5 hours or until a skewer inserted in the center comes out clean.
  • Let it cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve slices of Boiled Fruit Cake with whipped cream or vanilla ice cream. Store in an airtight container at room temperature for up to a week or refrigerate for longer shelf life. You can add spices like cinnamon or nutmeg for a different taste.
