Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour You can use whole wheat flour for a healthier version.
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons melted butter

Fruits

  • 1 cup fresh blueberries Can also use thawed frozen blueberries.

Preparation

  • In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, egg, and melted butter.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Don't overmix!
  • Gently fold in the fresh blueberries.

Cooking

  • Heat a griddle or non-stick pan over medium heat and grease it lightly.
  • Pour batter onto the griddle and cook until bubbles form, about 2-3 minutes.
  • Flip pancakes and cook until golden brown on the other side.

Serving

  • Serve warm with syrup and extra blueberries if you desire.

Notes

Make sure your pan is hot enough before pouring the batter. Don't overmix the batter; it's okay if there are a few lumps. For an alternate flavor, consider adding other fruits like strawberries, bananas, or a dash of cinnamon.
