Ingredients
  

For the dough

  • 1 cup unsalted butter, softened Ensure the butter is softened but not melted.
  • 0.5 cup powdered sugar For the dough.
  • 1 teaspoon vanilla extract
  • 2.25 cups all-purpose flour
  • 1 cup very finely chopped pecans Chop finely for better blending.
  • 0.25 teaspoon salt

For rolling

  • 0.333 cup powdered sugar More may be added for rolling.

Preparation

  • Gather all the ingredients.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a large bowl, beat the softened butter, 1/2 cup of powdered sugar, and vanilla extract with an electric mixer until smooth.
  • Gradually mix in the flour, chopped pecans, and salt until everything is well combined.
  • Roll the dough into walnut-sized balls and place them 2 inches apart on ungreased baking sheets.

Baking

  • Bake in the preheated oven until the bottoms are light golden brown, about 12 to 15 minutes. The tops should remain pale.
  • Remove the cookies from the oven and let them sit on the baking sheets for a short time before transferring them to wire racks to cool.

Finishing Touch

  • While the cookies are still warm, roll them in 1/3 cup of powdered sugar in a shallow bowl. Then return them to the wire racks to cool completely.
  • Once cooled, roll the cookies in powdered sugar again for an extra sweet touch.

Notes

Store cookies in an airtight container at room temperature for up to a week. Experiment with nuts like walnuts or almonds for flavor variations.
