  • 2 pounds cream cheese, softened Make sure the cream cheese is softened before mixing.
  • 1 cup sugar
  • 4 large eggs
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 cup all-purpose flour Don't overmix once the flour is added.
  • to taste pinch salt

Preparation and Baking

  • Preheat your oven to 400°F (200°C) and prepare a 9-inch springform pan by lining it with parchment paper.
  • In a large mixing bowl, beat the softened cream cheese and sugar together until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Stir in the heavy cream, vanilla extract, and salt until all the ingredients are incorporated.
  • Gradually add the flour and mix until just combined.
  • Pour the batter into the prepared pan.
  • Bake for 25-30 minutes, until the top is dark brown and the center is slightly jiggly.
  • Allow it to cool before refrigerating for at least 4 hours.

Notes

Best served chilled. Can be topped with fresh berries or a drizzle of caramel sauce. Wrap leftovers tightly in plastic wrap and refrigerate for 3-4 days or freeze for up to 2 months. This cheesecake tastes better after resting in the fridge for a few hours or overnight.
