Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  • Add in the egg and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the almond flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  • Roll the dough into small balls and place them on a lined baking sheet.
  • Flatten each ball slightly with your hand or a fork.
  • Bake for 10-12 minutes or until the edges are lightly golden.
  • Let them cool on the baking sheet before transferring to a wire rack.

Notes

Serve warm with milk or tea. Store in an airtight container for up to a week or freeze for up to three months. For best texture, ensure butter is soft and do not skip the cooling step.
